September is a strange month. The sun should still burn like it’s July, but then the first rains come in, washing away the sweat and leaving you wondering if you should grab your jumper or an umbrella. That in-between feeling, summer not quite gone, autumn not quite here, is exactly where this cocktail lives.
Enter the Barigōri. The name is a cultural mashup: “Bari,” as in the southern Italian city where life is as raw as it is warm, and “gōri,” Japanese for rough, unrefined, straight to the point. It’s basically what happens when you take Bari’s classic Sciacquetta (that bare-bones mix of lemon granita and sparkling water), flip it upside down, and then wink at Japan while you’re at it. Opposite and contrary to the Venetian Sgroppino, this one is a southern rebel with an eastern twist.

It’s a drink that’s crisp and zesty but also layered and contemplative, like a summer storm that clears the air before the sun comes back out.
Now, let’s get to the music.
The Pairing:
We’re pairing the Barigōri with “Her Own Reflection” by Valentina Magaletti, percussionist, producer, and sonic architect born in Bari. The track, just like the cocktail, is deliberate and powerful. It toys with space, repetition, and texture. It’s music for thinking while the weather shifts, for watching clouds roll in, then clearing slowly, rhythm by rhythm.

Mixologist
Morris Mau, a ten-year successful bartender based in Milan. His career be began at the Dude Club in Milan and then forward to places such as the Bulgari Hotel, the Apophis Club and the Portal Club of the Deus Ex Machina brand.
Morris is a mixology's philanthropist, a romantic visionary, a refined tailor with an alcholic soul, he is the result of a blood cocktail mixed with the Caribbean's sea, Cameroon and the Naples' coast.
Today he's a bar consultant trying to rewrite the definition of hospitality by creating bespoke concepts and unique experiences for his clients.
